In most countries, especially Italy, scampi means the peeled tail of pretty much any kind of prawn but in the UK it refers to the meat of just one special prawn: the langoustine. Langoustine is a small lobster found in the colder waters of Scotland, Ireland and Norway.
Scampi is a crustacean -based seafood dish, especially featuring langoustine (the Italian name of which gives the dish its name), as well as shrimp or prawns, varying regionally in preparation.
Scampi is made from the tail meat of langoustines (Nephrops norvegicus). In lower quality scampi, the langoustine is mixed with whitefish and water. Langoustines are mainly caught by bottom-trawling . This is Scotland’s most valuable shellfish fishery, yielding £125m per year. Scotland is the world’s leading exporter of langoustines.
