El Gaucho. El Gaucho is part of Hotel Indigo on Vancouver, Washington’s renovated Columbia River waterfront. The Northwest's premiere steakhouse occupies 8,500 sq. ft. of restaurant space on the bottom floor, as well as the 8th floor terrace bar with patio (Witness Tree Lounge).
