Download SaveGame Manager GX and launch it through Homebrew Channel on the Wii or vWii. It's a homebrew app that can transfer save files between the console's internal storage and an SD card. It can extract an individual save from the Wii's internal storage for Dolphin to use.
I currently use my wii on a pc monitor. Using a video to vga adapter. Yellow rca goes in, vga goes out to monitor. And I have a rca to 3.5mm adapter for the sound. Your idea should also work.
Short answer: You’ll get better quality using component to a converter, at no additional latency cost. The analog to digital converter in a Wii2HDMI performs basically the same as the chip in a dedicated YPbPr-to-HDMI converter but they tend to be of lesser quality and don’t always have good QC.
I finally received the RetroTINK adapter for my Wii and it works GREAT! I just took my component cables coming from my Yamaha receiver, that used to go to component input on old TV, and ran through RetroTINK then hdmi out to TV and voila!
