Star Wars D6 is a great system for beginners. The core concept is that you get to roll a certain number of D6s based on your ability scores to attempt actions. The hope is that you can roll as many as possible, both to up your chances of success but also just because rolling tons of dice is fun.

Second edition Revised and Expanded is far more comprehensive and complete. It takes a little bit longer to explain, but is still pretty damn simple.
