In people consuming a low-cholesterol diet, egg yolk intake increased fasting serum cholesterol level by 40 mg/dL (1.04 mmol/L) . This finding was substantiated later by Mattson et al and Sacks et al , who found a 12% increase in LDL cholesterol level with egg consumption.
Nonetheless, excessive egg consumption is generally discouraged due to the high cholesterol content in egg yolk. A meta-analysis found that the addition of 100 mg dietary cholesterol from eggs minimally increased total cholesterol and HDL cholesterol (4).
